This week’s magnum: 2016 Domaine de La Soufrandière, Pouilly-Vinzelles
This Chardonnay is grown in Burgundy in the appellation of Pouilly-Vinzelles, a small region in comparison to the more well known neighboring Pouilly-Fuisse. The grapes are grown biodynamically in red soil rich in iron oxide. Whole grapes are pressed then natural wild yeast fermentation takes over. The wine goes through malolactic fermentation which adds to the creamy texture and then aged in old oak for 11 months.
